"This is a super-fast, filling, healthy, and delicious vegetarian soup. Note: you may add corn kernels when you remove the pressure cooker lid. Remember that this soup is hotter than any soup that you make on the stove so let it cool accordingly.Recipe adapted from "The Veggie Queen" Jill Nussinow, MS, RD, and is on her DVD, "Pressure Cooking: A Fresh Look"."

  1. Would a slow cooker work for this recipe. I do not have a pressure cooker

  2. So delicious! I didn't have savory but it was great without it.

  3. I made this soup tonight and it was delicious. I do, however think 8 cups of liquids would be better, because otherwise this would be more like a stew rather than a soup. Also for personal preference I added, after I cooled and lifted the lid, one can of rotel tomatoes and a little shredded cabbage. Enjoyed this very much. I cooked it for 6 minutes as recipe directed, more would have made it mush. Maybe thats because I have and electric stove?

  4. This is a really good recipe! Delicious ! I also didn't have savory so I added the parsley and oregano as per the previous person suggested. Really good ! I even added a fresh sliced jalapeno for spice..maybe next time just 1/2 though. I also added about a cup and 1/2 of roughly chopped cabbage and should have added another cup of liquid but it was still good, like a stew. This is only my 2nd attempt with the pressure cooker and looking forward to more recipes !!!

  5. This was excellent I had no savory winter herbs so I used 1/2 Tbsp of parsley and 1/2 tsp oregano. I also added 1 Tbsp minced garlic, 3 stalks of celery chopped and added an extra potato. It was my first time using my pressure cooker and it turned out great.

  1. How long does the pressure cooker take?

  2. Loved this recipie. The thyme and bay leaves really compliment lentils well. Also, I have tried this dish substituting smoked paprika for the savory with great success. All I would add is more potato and maybe a tablespoon of vinegar. This would help keep the dish looking fresh if freezing or refrigerating.

FAQs

Is soup better in a pressure cooker? ›

The pressure cooker has no rival when it comes to preparing soup quickly and easily. Not only do pressure cookers speed up cooking time, but they're also energy efficient. With so many different pressure cookers, it can be overwhelming to pick the one that's right for you.

Should lentils be soaked before making soup? ›

The other good news: Lentils don't need to soak as beans do (though you do need to sort and rinse them before cooking). Different types of lentils cook in different amounts of time. Red lentils are the fastest cooking and they dissolve as they cook and make for a smooth soup.

Why is my lentil soup not thick? ›

Cook It Longer

Sometimes soup just needs to simmer longer to reach the perfect consistency. Check to see if the vegetables are tender, and then taste the broth. If the soup tastes a bit watery, give it more time.

Can you overcook lentil soup? ›

Yes, you can overcook lentils; they will become mushy. Much depends on the type of lentil you're using. Some cook quicker and hold their shape better than others. To avoid overcooking them, always follow the cooking directions in your recipe and use the type of lentils called for in the ingredient list.

How much water do you put in a pressure cooker for soup? ›

When you use a pressure cooker, you need to have enough liquid in the pot for it to come up to pressure and cook the food properly. The rule of liquids in pressure cooking is to always add at least 1 cup of liquid unless the recipe states otherwise. The liquid will help create enough steam to cook the meal.

How long do you can soup in a pressure cooker? ›

  1. For weighted gauge pressure canners at 0-1000 feet, process at 10 pounds pressure - 60 minutes for pints and 75 minutes for quarts. ...
  2. For dial gauge pressure canners at 0-2000 feet, process at 11 pounds pressure – process 60 minutes for pints and 75 minutes for quarts.

Which color lentils are best for soup? ›

Red lentils are best for soups, curries, dals, and anything that craves a creamy, thicker, more comforting touch.

How long do lentils take to cook? ›

Bring to a boil, cover tightly, reduce heat and simmer until they are tender. For whole lentils, cook time is typically 15-20 minutes. For split red lentils, cook time is typically only about 5-7 minutes. Be sure to season with salt after cooking – if salt is added before, the lentils will become tough.

Why won't my lentils soften in soup? ›

Editor: First, I wonder how old your lentils are. If they're more than a year or two old, they will often stay crunchy in the middle no matter how long you cook them! Another trick is to wait to add salt or acidic ingredients until near the end of cooking. Take a look at our post on cooking lentils for some more help!

Why is my lentil soup tasteless? ›

Lentils are bland, that's why they are perfect for adding flavour to. Personally, my favourite is to fry up bits of bacon and stir those into the cooked lentils, dead easy and quick. What do I do to keep lentils from being bland and terrible? Add loads of garlic, cumin, onion, and ginger.

Why did my lentil soup turn black? ›

the color change you've observed is from oxidation. If you want to prevent this, lay some plastic wrap over the surface of your lentils to prevent air from getting to them, or add some acid, like lime juice, to the recipe.

What is the foam on top of lentil soup? ›

That means the foam will typically appear when making meat-based broths and, to a lesser degree, soups made from high-protein vegetables such as chickpeas and lentils. When those coagulated proteins cluster together, they can create air pockets, which is what causes the “sudsy bubbles,” says Trout.

How to tell when lentils are done? ›

Honestly, the best way to tell if lentils are done are to taste them. They should be tender to the bite, with some varieties of lentils being a bit more firm and others more soft. That said, if you would like your lentils to be softer, just simmer them a few minutes longer until they reaches your desired consistency.

What makes lentils taste better? ›

Think more like you're cooking pasta- you just need significantly more water than lentils. You can also use broth instead of adding an extra layer of flavor. I like adding a bay leaf, an onion cut in half, and a clove of garlic to add flavor to the lentils.

What happens if you forget to rinse lentils? ›

While it seems like an unnecessary step, don't skip rinsing your lentils and sifting through them before cooking to remove any stones or debris. It is rare to find stones, but it does happen.

Is it better to slow cook or pressure cook soup? ›

Slow cookers and pressure cookers come in a variety of sizes up to eight quarts, but pressure cookers need extra room inside the pot for the steam to accumulate, which limits the batch size. If you have a large family or plan on making soups and stews you can store for later, you may be better served by a slow cooker.

What are the disadvantages of cooking in a pressure cooker? ›

Because pressure cooking is an enclosed form of cooking, there is no contact with air. Therefore, some nutritionists argue that the ingredients may remain uncooked from within which can hamper your digestion on being consumed. Almost all cooking methods, including pressure cooking, have their own pros and cons.

Why soup in a pressure cooker cooks faster? ›

At that pressure, water boils at 121°C (250°F). That means food can cook at a much higher temperature than it ever could at atmospheric pressure—and since cooking reactions speed up at higher temperatures, your food cooks faster. It also doesn't dry out, since the water stays in liquid form.

Why pressure cook soup? ›

The pressure created by a traditional pressure cooker or an Instant Pot helps to drastically speed up the process of pulling the flavors and magic from the beef bones and into your soup. It may not be exactly like what you'd get after hours of simmering, but we are very happy with this shortcut method—you will be too!
