Ingredients

  • 1 Gallon Ultra-Pasteurized Milk
  • 2 Tablespoons Plain Yogurt with active cultures
  • 14 oz Can of Sweetened Condensed Milk (optional)

Method

  • 1)

Pour all the ingredients in to the Instant Pot, stir very well with a whisk to ensure that the mixture is completely smooth. (Under mixing the starter or sweetened condensed milk can cause grainy / stringy texture). Seal the Instant Pot using the Pressure Cooker lid.

*You can also make yogurt directly in jars. Fill the jars with the mixture & seal with lids. Pour 1 Cup of water into the pot and stack the jars inside the pot (you don’t need the trivet)

  • 2)

Press Sous Vide to select the Sous Vide Smart Program. Use the + / − Time buttons to adjust the temperature to 113°F. Use the + / − Time buttons to adjust the cook time to 9 Hours and Press Start. Refrigerate for at least 4 Hours before serving.

  • 3)

If you want to make Greek Yogurt, pour the yogurt into the gallon yogurt strainer (purchase here). Let it strain in the refrigerator for 10 hours or overnight. Enjoy!

Do you have a way to do this with the Instant Pot / Air Fryer Duo crisp? It doesn’t have a Yogurt button.

I have never seen a yogurt recipe that doesn’t start with boiling the milk. Why don’t you heat it up first? I really want to try this but am nervous about ruining all that milk. I’m hoping to make this in a few hours if you see this.

Hi Kiara, this recipe uses Ultra-Pasturized Milk which has already been heated to 280°F – that’s why you don’t have to heat it up first. Standard Pasteurized Milk is only heated to 161°F which isn’t hot enough for yogurt making, that’s why you have to heat pasteurized milk.

Hi! Is the consistency of the instant pot yoghurt the same as the store shop one? Just made half galon and it’s just hot milk. I don’t know what I did wrong (I halved the recipe)

Hello, yes it’s supposed be like store bought yogurt. Did you use Ultra-Pasteurized Milk? The milk also should not feel hot, if it does then it’s not on the correct setting, it should be just slightly warm otherwise it kills the yogurt culture.

Hello we live in Canada and I have tried to look for Ultra-Pasturized Milk. I was wondering if this brand will work to make the yogurt. Its Natrel Organic Fine-Filtered 3.8% Milk. It does say pasteurized at the side of the carton.

Hi Elizabeth, I live in Canada too and I was wondering the same thing. I couldn’t find ultra-pasteurized milk either. How did your yogurt turn out with the Natrel?

Hi Elizabeth! Sorry if this is a stupid question, I’m a newbie in cooking. If the recipe is halved, do I need to cook it for 4.5 hours instead of 9h, or is the time the same even if the amount of milk and starter changes? Thanks a lot!!!

I watched some other youtube and they said the silicone ring needs to be removed for yogurt making. Do I need to remove it to try this sous vide method for yogurt?

Hello, no you don’t need to remove the ring, when making yogurt, it actually doesn’t make a difference if you have the ring on or off since it doesn’t get hot enough to pressurize

I’d really like to try this but I dont know if I’m reading the recipe wrong. I don’t understand how I can sous vide this without putting it in jars. Also you say to just add i cup of water to the pot but if I’m going to use the sous vide method don’t the jars need to be covered with the water?

Hi, this is a hack using the sous vide function, this is not a true sous vide recipe. All you’re doing is using the sous vide function to get the Instant Pot to the correct temp to incubate the yogurt cultures. Jars do to need to be covered in water.

Thank you for your quick response. So if I don’t use jars I could just put the UP milk and condensed milk and starter into the pot and set it on the sous vide setting with 108 degrees? I can put it in a container(s) after it is done?

If you don’t use jars, just place the mixture directly into the liner – sous vide setting should be 113°F. Yes you can move them into containers when it done.

FAQs

How do you set the yogurt setting on Instant Pot duo? ›

How does the Instant Pot yogurt setting work? The yogurt setting on the Instant Pot had two modes, the boil mode and the incubate mode. Press the yogurt button until it says "boil" for the boil mode; press until it shows a timer for the incubate mode — it defaults to eight hours.

Is it worth it to make yogurt in an Instant Pot? ›

It's so much easier than I expected! It's also much cheaper, and in my opinion, more delicious than any store bought yogurt you can get. Making this Easy Instant Pot Yogurt has quickly become one of my favourite weekly rituals.

How long does it take an Instant Pot to boil milk for yogurt? ›

Boil the milk using the Yogurt function (click the button until it says “boil”) on the Instant Pot. This should take about 45 minutes. The milk will reach 180-190 degrees Fahrenheit.

What happens if you use too much yogurt starter? ›

If too much starter culture is used, the bacteria will be crowded and run out of food (lactose) before the yogurt is set. Too much starter can produce a sour taste, rather than the desired tart taste.

Is making yogurt cheaper than buying it? ›

Making your own yogurt is way cheaper than buying yogurt at the store. It's easy to calculate the savings, because one litre of milk makes a 750-g tub of yogurt (plus some). I used to spend $6.99 on a container of organic yogurt, but one litre of organic milk only costs me $2.60.

Should I strain my homemade yogurt? ›

Your yogurt becomes its finest once it has been strained some (or quite a bit) to remove the whey that makes it so thin. Straining intensifies the yogurt's flavor, and gives it the body and texture we crave. The more the yogurt is strained, the thicker it becomes.

Does homemade yogurt get thicker the longer it ferments? ›

Fermentation time: The longer you ferment the more tart, and thicker, your yogurt will be. Different cultures work at different rates, but as a general guideline: 6-8 hours produces a mild yogurt, 8-12 hours a tart yogurt, and more than 12 hours produces a sour yogurt.

What happens if you heat milk too high when making yogurt? ›

Higher temperatures and longer culturing times can cause a lumpy texture and excessive whey separation (similar to the spoon on right on the photo). We tested an 86 ºF / 30 ºC culture and found that it makes perfect, smooth yogurt.

Why heat milk to 180 for yogurt? ›

Hold the milk at 180° for 30 minutes. I do this by keeping it in an oven pre-heated to 180° F. This is the most important step in creating the creamy consistency and texture most people want out of yogurt. It's also the trick no one seems to know about!

How long to chill homemade yogurt before straining? ›

Now take the yogurt (which at this point is regular yogurt and you can eat it like this if you want) and put it in a yogurt maker/strainer or in 2 layers of cheese cloth over a large bowl and refrigerate for 8-24 hours. The more you refrigerate it while it's straining the thicker it will get.

Is making your own yogurt healthier? ›

Making yogurt at home is not only healthier and more nutritious, it also saves you from unhealthy additives and sugars in the store bought yogurt. Homemade yogurt- when made right- turns out thick, creamy, and naturally flavorful, so you don't need artificial thickeners, sweeteners, or other additives.

What are the benefits of making your own yogurt? ›

Healthier Yogurt

Yogurt benefits decrease when sugar and other additives are mixed in. Homemade yogurt gives you the freedom to use quality ingredients like real fruit and honey to increase nutrients, eliminate fillers and sugar and get the most out of your snack.

How much yogurt does 1 gallon milk yield? ›

Yogurt = 72.6 ounces

This means that with one gallon of whole milk, I made 72.6 ounces of Greek yogurt, which is around 9 cups. This also means that about 20.7 ounces of milk was lost during the yogurt making process.
