Garlic fried rice recipe. Garlic Fried Rice is a popular Filipino breakfast that is simple, filling & quick to make. It is also called 'Sinangag' in the Philippines. It is one of the best ways to use up leftover rice.

I tried the basic version a few days ago and thought it tasted really good, but the family who are more used to spicy food found it a wee bit bland.

So I made it again with a few changes, the result was too good. Give it a try and I’m sure this garlic fried rice will become your go-to comfort food especially on a cold rainy day.

This garlic fried rice requires very few ingredients. Hence it is also known as “Poor Man’s Fried Rice” or “Filipino Garlic Fried Rice”.

In the Philippines, this rice is usually served with a side of fried eggs & fish which will make a wholesome & nutritious meal.

If you are a vegetarian & you prefer a vegetarian side dish, you can serve this with Mushroom Pepper Fry, Baby Potato Sambal, or Chili Paneer.

As the basic Sinangag recipe is very simple, one can always adapt it to suit one’s palate.

Ingredients

Rice:Cooked rice is used to rustle up this fried rice. Regular cooked leftover rice works best in this recipe.

Garlic:You can add how much ever garlic you wish. This rice basically reflects your love for garlic.

Red chili paste:Freshly ground red chili paste is used.

Soy sauce:This is added for more flavor. Besides one can't imagine fried rice without soy sauce.

Oil:I have used gingelly oil as that flavor goes well with garlic.

Salt to taste & spring onions is added for garnish.

Instructions

To make this Garlic Fried Rice,

1. First, soak both whole dry red chilies & Kashmiri red chilies in hot water for 15 mins.

2. Using little water used for soaking, grind the chilies to a smooth paste.

3. Smash garlic to release flavor & mince finely.

4. Heat gingelly oil in a pan & add minced garlic.

5. Cook over high flame for 1 min.

6. Reduce flame & sauté for 3- 4 minutes.

7. The garlic should become brown in color, crisp and aromatic.

8. Add red chili paste.

9. Mix well to combine & saute over high flame for 1 min.

10. Add cooked rice & mix to combine.

11. Add dark soy sauce.

12. Add salt to taste. Toss everything together over medium flame for another 2-3 minutes.

13. Garnish the garlic fried rice with spring onion greens & serve hot.

Expert Tips

If you have readymade red chili paste, you can use 1 tablespoon of it instead of soaking red chilies to save time.

You can add red chili sauce instead of the paste but it will lend a sweet and tangy taste.

Day-old leftover cooked rice works best in this recipe.

Top Tip

Slowly cook the garlic in oil so that the oil gets infused with the flavor & aroma of garlic. Do not hurry up this step.

Use the smaller variety of garlic for more flavor & not the bigger Chinese garlic.

FAQ

Substitutions

Regular cooked rice is only used to make this garlic fried rice. But if you wish, you can use either cooked basmati rice or seeraga samba rice too.

Variations

You can also add scrambled eggs while tossing the rice.

You can also add diced vegetables like carrots, french beans, shredded cabbage, or sprouts to make it more wholesome.

Is it too spicy?

If you feel that the rice will be too spicy, you can either reduce the number of red chilies or break open the chilies & remove the seeds before soaking which reduces the heat.

You can also increase the Kashmiri red chilies & reduce the other ones as Kashmiri red chilies are less spicy compared to regular red chilies.

Can this be made in advance?

The rice can be cooked in advance. The chili paste can be prepared in advance & refrigerated till use. The garlic can also be peeled & stored in the fridge till use. Just smash & mince just before you begin to cook.

Ingredients

  • 2 cups cooked rice
  • 10 Garlic
  • 4 Whole dry red chilies
  • 2 Kashmiri Red chilies
  • 1 teaspoon Dark soy sauce
  • 2 tablespoon Gingelly oil
  • Salt to taste
  • 2 teaspoon Spring onions greens for garnish

Instructions

Preparation

  • Soak both whole dry red chilies & Kashmiri red chilies in ½ cup hot water for 15 mins.

  • Drain the chilies & transfer them to a mixer jar. Grind to a smooth paste and set this aside.

  • Smash the garlic with the flat of a knife to release its flavor & then mince them finely. Set this aside. You can also use mortar & pestle.

Make Garlic Fried Rice

  • Heat a wok with oil. Add crushed garlic and cook over high flame for 1 min.

  • Reduce flame & sauté for 3- 4 minutes.

  • The garlic should become brown in color, crisp and aromatic.

  • Add the ground red chili paste & saute over high flame for 1 min.

  • Add cooked rice, salt, dark soy sauce and mix well.

  • Toss everything together over medium flame for another 2-3 minutes.

  • Keep tossing till the garlic and the garlic-infused oil, coat the rice well & it gets fully heated through.

  • Garlic fried rice is ready. Garnish with chopped spring onion greens.

  • Serve piping hot with fried eggs or any side dish of your choice.
