This easy Pumpkin Lasagna is a perfect fall dessert! It is a fun layered pumpkin dessert lasagna that looks festive at a fall dinner party or Thanksgiving.
Sometimes I like to serve layered pumpkin desserts that are other than pumpkin pie and this sweet pumpkin lasagna does it beautifully. it is easy dessert for the fall season.
This Pumpkin layer dessert recipe is one of my favorite way to enjoy the season. It is a nice simple dessert for Thanksgiving or Friendsgivings (in most years).

This chilled dessert recipe is like a cross between a pie and a parfait with all the fall flavors. It has a creamy pumpkin flavor this is so comforting this time of year! Because this dish has to chill for several hours, you will want to make this the day or evening before serving.

Ingredients
Pumpkin – pumpkin puree, not pumpkin pie filling
Instant pudding - vanilla flavor.
Cream Cheese – I use regular cream cheese. It can be name -brand or generic.
Whipped Topping – cool whip or whipped heavy cream.
Nuts - I prefer pecans, but walnuts or almonds work well too. Just be sure to chop them to little bits. A food processor can be used for this step.
Equipment and Kitchen Tools
- 2 large mixing bowl
- stand mixer or hand mixer
- spatula
- baking pan
- food processor or knife and cutting board
How to make Pumpkin Lasagna
The full recipe is below, but these are the basic steps to make this:
- Mix crust ingredients.
- Layer crust in pan and bake.
- Blend the cream cheese layer.
- Layer in the pan.
5. Make the custard.
6. Add pumpkin.
7. Layer in pan and chill.
8. Top with whipped cream and a little bit of chopped nuts.

Storage
Store in an airtight container or cover with plastic wrap.
- To cut, dip a knife or serving spatula in hot water before cutting each slice.
- Keep leftovers in the refrigerator.
- Cut the nuts ahead of time so that they are ready to go when preparing.

Ingredients
Crust
- 1 cup flour I use all -purpose
- 2 tablespoons sugar
- ¼ cup pecans or walnuts chopped finely
- ½ cup butter softened
Cream Cheese Layer
- 1 8 oz package cream cheese, softened
- 1 cup granulated sugar
- 1 container 8 oz whipped topping, thawed
Pumpkin Layer
- 3 small boxes 3.4 oz vanilla pudding
- 3 cups milk
- 1 cup from 15 oz can pumpkin puree
- 1 teaspoon pumpkin pie spice or ground cinnamon
Topping
- 1 container 8 oz whipped topping, thawed
- Pecans chopped
Instructions
Prepare Crust
Preheat oven to 350 degrees F
Lightly coat 13x9 baking dish with cooking spray
In a large bowl, combine flour, sugar and nuts
Add butter to flour mixture and mix well
Press into 13x9 baking dish. Cover the bottom of the pan with the crust layer.
Bake for 15-18 minutes or until golden brown
Cool completely on a wire rack
Cream Cheese Layer - middle layer
In a medium bowl, cream together softened cream cheese and sugar until smooth
Stir in 1 (8 oz) container whipped topping until smooth
Spread over crust
Place in refrigerator to chill at least 30 minutes
Pumpkin Pudding Layer
In a large bowl, combine pudding mix and milk until smooth and creamy
Fold in pumpkin and spice until smooth and creamy
Spread over cream cheese layer
Place in refrigerator to chill at least 15 minutes or until pudding is set
Whipped Topping Layer - Top Layer
Spread remaining whipped topping over pudding layer
Sprinkle with chopped pecans
Place in refrigerator until ready to serve at least 4 hours.
