Lasagna soup is a hearty and comforting soup that takes all the delicious flavors of a classic lasagna and transforms them into a warm and cozy bowl of soup. It is also low in calories and very point friendly for Weight Watchers.

Why You Will Like This Recipe

This soup typically includes ground beef, tomatoes, onions, garlic, and Italian herbs, all simmered together with beef broth and broken lasagna noodles.

Lasagna soup is then topped with a generous dollop of ricotta cheese and sprinkled with mozzarella and parmesan cheese. It's a perfect dish for a cold winter night or anytime you're in the mood for a delicious and satisfying meal.

Lasagna soup is one of my top 100 recipes on this site! It is lasagna in soup form and a reader favorite. I will sometimes heat up some Texas toast (Lite) and use that to dip the soup in if I have enough points left over for that.

I like to make this lasagna soup during the Winter months here. It helps me get through the dreadful and super cold awful months of January and February in Fargo, ND. My mom sometimes jokes about how whenever she makes lasagna, her lasagna is so soupy. Well, guess what Ma? Mine is too. 🙂

  • Onion, chopped (yellow or white)
  • Lean ground beef Is considered better than higher fat options for several reasons. First, it has less saturated fat, which can contribute to heart disease and other health issues. Additionally, it tends to have fewer calories per serving, making it a good option for those watching their weight. The 96% lean ground beef from Aldi is my favorite.
  • Garlic, minced - Chopped fresh garlic can take some time to chop so I often always use the freshly minced garlic that comes already made in a jar.
  • Crushed tomatoes - or store bought marinara sauce can be used.
  • Dried oregano - Is a common herb used in cooking, particularly in Mediterranean and Mexican cuisine. It has a pungent, slightly bitter taste and a strong aroma
  • Low-sodium chicken broth - Some people prefer homemade stock, which allows for control over the ingredients and seasoning. Othe rs prefer store-bought stock for convenience.
  • Lasagna noodles, broke into 2" pieces - or any pasta shape, I will sometimes use Malfalda.
  • Fat-free shredded mozzarella - Reduced-Fat Cheese has a lower calorie count and less saturated fat than regular cheese, but it may also have a different taste and texture. It also helps with keeping the calorie count pretty low for this recipe.
  • Toppings (optional):
  • Grated Parmesan, for garnish
  • Torn fresh basil, for garnish

How to make Lasagna Soup

Step 1: In a large skillet over medium heat, spray the bottom of the pan with cooking spray. Add onions and season with salt. Cook until tender and golden, 5 minutes, then add sausage and cook until no longer pink. Drain fat and return to pot.

Step 2: Add garlic and stir until fragrant, 1 minute, then add crushed tomatoes and dried oregano. Pour in chicken broth and bring to a simmer.

Step 3: Pour in chicken broth and bring to a simmer.Add lasagna noodles and cook, stirring occasionally, until al dente, 10 minutes.

Add mozzarella and stir, letting melt into soup.

Garnish with Parm and basil.

  • 1 lb. lean ground turkey sausage (I used Jennie-O) or 93% lean ground beef (points will be different!)
  • 4 cloves garlic, minced
  • 28 oz. can crushed tomatoes
  • 1 tbsp. dried oregano
  • 5 c. low-sodium chicken broth or marinara sauce
  • 8 oz. lasagna noodles, broke into 2" pieces (or any pasta shape)
  • 2 c. fat-free shredded mozzarella
