It’s been rainy here pretty much the last few weeks and we’re teeter-tottering in the 80s. I may have even brokena light sweat making broccoli and cheese soup, the other day. A girl can dream, can’t she?

Creamy Broccoli Cheese Soup Recipe | Little Spice Jar (3)When I was in college broccoli and cheese soup was a weekly staple. They always served it at the little soup and sandwich shop and I would make a pit stop to pick up a bowl before heading over to the library to bury my head in a textbook. The comfort of broccoli cheese soup lessened the stress of studying subjects like organic chemistry ←(ew).

What I love most about this homemade broccoli cheese soup is that it takes just30 minutes to make from start to finish, it’s easy, and straight forward. And talk about being right on time for Meatless Monday. This is a great soup to make on the weekend for weekday meals or on a weeknight for dinner. Loads of broccoli and carrots will keep you full for hours. It’s perfect to serve with crusty French bread and a side salad.

Creamy Broccoli Cheese Soup Recipe | Little Spice Jar (4)This is a no-frills, easy-breezy, for-cheesy (hehe, couldn’t help it) kind of broccoli cheese soup recipe. It tastes just like Panera Breads Broccoli Cheese Soup – and I would go so far as to say it actually tastes better.

We start with lots of broccoli. We’re talking 3 1/2 cups worth of broccoli. I used fresh broccoli and would recommend that you do the same. Frozen broccoli (even if it’s been thawed) may release too much water into the soup, and nobody likes watery broccoli cheese soup. Bleh.

Creamy Broccoli Cheese Soup Recipe | Little Spice Jar (5)Since this soup is called broccoli cheese soup it’s only right that we add LOTS of cheese. I’ve used two types of cheese for my broccoli cheese soup recipe. It’s totally up to you whether you use mild or sharp cheddar for this soup. I went with the sharp cheddar cheese because I like that little kick you get from the cheese. If it’s not your thing, mild cheddar tastes delicious too.

The second kind of cheese is parmesan. Parmesan cheese is my secret ingredient in my broccoli cheese soup recipe. The parmesan flavor give this soupthat little special somethin’ somethin’ that keeps everyone guessing what it is that’s making this soup taste so gosh darn good. I won’t tell if you won’t.

If you’re one of those people that likes the ‘cream of broccoli cheese soup’, it’s really easy to do with this recipe. Just use an immersion blender or a regular blender (holding down the lid with a towel if you’re doing it while the soup is hot) to blend everything. Add the cheddar cheese in after you’ve blended it, it’ll melt down and just be perfect.

This is definitely my favorite broccoli cheese soup recipe and I hope you love it as much as I do. What I wish for you is that you make a big batch of it and enjoy it throughout the week. We’ve never had this soup last more than 2 days in the refrigerator. Yup, it’s that good!

FAQs

How to thicken up cream of broccoli soup? ›

Add Flour Or Cornstarch

You can thicken soup by adding flour, cornstarch, or another starchy substitute. For the best results, never add flour or cornstarch directly to your soup. If you do, it will clump up on top. Instead, ladle a small amount of broth into a separate bowl and let it cool.

Why does my broccoli soup taste bland? ›

Insufficient seasoning.

Solution: Taste the soup and adjust the salt and pepper accordingly.

Why won t my broccoli cheddar soup thicken? ›

flour: So, if you don't use flour here, it won't thicken quite like a broccoli cheddar soup should, even with this recipe being a “brothy” version. I recommend using it, or swapping for gluten free flour if needed.

Why isn't my cheese melting in my broccoli soup? ›

If you are using pre-shredded cheese it has been coated with an anti-clumping agent, which may mean it melts more slowly or needs more heat. If you are adding cold cheese to the soup, adding too much at once will lower the temperature of the soup.

Why did my broccoli cheddar soup come out grainy? ›

The temperature you cook Broccoli Cheese Soup at is key to making sure it doesn't end up grainy or curdled. Medium heat is best for dairy-based soups so it doesn't boil and curdle.

Why is my cheese clumping in broccoli cheddar soup? ›

If heated too high, you risk clumping and if too low, not melting properly. With soup, you might be able to fix it with an immersion blender, or you might not. At a temperature of 150 or so, the protein bonds in the cheese break down and as a result, too much fo the moisture escapes too quickly.

How do you keep broccoli cheese soup from separating? ›

Before adding the cheese, you can add one small peeled and diced russet potato to the soup. Once it's cooked, use an immersion blender to puree the potato as you add the cheese. This will help emulsify the milk and cheese, keeping the soup creamy without affecting flavor.

Why did my cream of broccoli soup curdle? ›

Since there is a bit of dairy in the soup, it can curdle if you reheat it too quickly or over too high a heat.

What is the best cheese for melting in soup? ›

Mild cheddar, Colby, Monterey jack, mozzarella, Swiss and queso blanco can all work well. “The best cheeses to melt into soups are cheeses that are higher in moisture and have a lower melting point,” says Bauer. In addition to cheddar and Monterey jack, he recommends Fontina and Gruyère.

Why does broccoli cheddar soup make my stomach hurt? ›

You can have a food intolerance to broccoli and other foods with salicylates. Your symptoms will likely be different from an allergic reaction. You may get: stomach pain.

How do you get cream cheese to melt in soup? ›

Add the chunks of cream cheese into the soup and let it cook for about 5 minutes or until the cream cheese is completely melted into the soup and the soup is thick and creamy. * To ensure no cream cheese chunks, place the unwrapped bar of cream cheese onto a microwave-safe plate, and cook for 40 seconds.

How do you thicken broccoli sauce? ›

Use one tablespoon cornstarch mixed with one tablespoon cold water (aka a cornstarch slurry) for each cup of medium-thick sauce. Thoroughly mix the cornstarch and water together. Our Test Kitchen recommends shaking the cornstarch and water in a Mason jar for easy mixing. Once combined, pour the mixture into your sauce.

Why is my cream soup watery? ›

Watery cream soups can come from a couple of different reasons. One of them is that the thickener that was utilized (be it a fat and flour roux or a liquid and flour or corn starch slurry) was inadequate. By inadequate I mean that there was not enough starch to hold the liquids in the desired thickened suspension.

How to thicken broccoli puree? ›

If you need to thicken up your puree for an older baby, it can sometimes be as simple as adding less liquid. You can also try adding baby cereal, plain whole milk yogurt, wheat germ, mashed low-sodium cottage cheese, mashed banana, pureed sweet potato, or pureed tofu.
