Happy Saturday! It’s always good to have a few great vegetarian recipes in your repertoire. Whether you’re entertaining vegetarian guests, want to eat a little lighter, gave up meat for Lent, or made a New Year’s resolution to eat less meat; vegetarian options are a welcome change. Today I have collected a variety of meatless recipes that, to me, really hit all the right notes. From a sunny pasta dish with caramelized corn, asparagus and turmeric, a fantastic Southwest Bean Burger, to a truly comforting bowl of mushroom stew and dumplings, today’s Kelly’s Kitchen is sure to inspire some vegetarian cooking!

Savory, hearty mushroom and veg stew with fluffy, tender dumplings is so satisfying, yet so light. Perfect for a chilly start to the week ahead. I have modified Kay Chun’s recipe for Mushrooms and Dumplings from four servings, to two.

2. Caramelized Corn and Asparagus Pasta

Let me start by saying I love this pasta dish! Caramelized corn with thinly cut asparagus, seasoned with turmeric and tossed with a light sauce of garlic, white wine, and pasta water, finished with a squeeze of fresh lemon juice. It’s so light, yet so full of sweet corn flavor; the earthiness of turmeric and the bright white wine make such a great combination. A perfect pasta dish with bright colors and sunny flavors. 3. Falafel with Tahini Yogurt Sauce

I am happy you’re here today. Today’s recipe is a special request from Alex, who has been sorely missing his favorite falafel sandwich. Falafel is a chickpea fritter, with herbs and spices, fried to a golden brown. It’s often served in a pita with cucumbers, tomatoes and tahini sauce or hummus. My favorite place to get falafel was near my old office in Cupertino, California and you could get your falafel sandwich with herby french fries tucked inside. So good! Today, we can do it however we like because this is the best homemade falafel I have ever tasted! Let’s do it, Falafel with Tahini Yogurt Sauce.

4. Spinach and Artichoke Lasagna

Today I have a delicious alternative to red-sauce lasagna. This Spinach and Artichoke Lasagna is all veggie and instead of using a béchamel sauce-based version, we are using cream cheese and sour cream to get that creaminess. Another alternative, instead of using ricotta cheese, we are using cottage cheese, which give this lasagna extra creamy cheesiness. If you’re like me and can’t tolerate cream-based sauces super well, this could be a great alternative for you.

5. Southwest Bean Burgers with Avocado and Slaw

I hope your week is going well. With all the meat-focused cookouts and barbecues this summer, sometimes a meatless burger is just the ticket. My experience with black bean burgers has never been anything to write home about; the often dry, hockey puck of a burger alternative has left me feeling very unsatisfied in the past. I am happy to report, though that my mind has been changed. Thanks to these Southwest Bean Burgers with Avocado and Slaw. So if you’re wanting a lighter burger option, these bean burgers are for you!

6.You Say Potato Pizza

This is probably my favorite pie from Escape From New York Pizza in San Francisco. Alex’s too. He has memories of ordering this pie from the Haight Street location when he and his brother lived in the Upper Haight, in San Francisco – long before we ever met. This is a vegetarian pie; so simple with only a few toppings, and it is so perfect.
